Dalma...Lentil with vegetables

Dalma is an authentic odia dish which is prepared mostly in every home. You can resemble this with south indian  sambhar but there is no tamarind or sambhar masala in this. In most houses in odisha Dalma is prepared on puja days as u can make it without onion garlic tempering.
I have a great taste bud for Dalma from childhood as I can have it with plain rice any time of the day.
It is one of the easy ways to use any of the vegetables in your refrigerator.



Ingredients:
Toor Dal - 1cup
1 carrot cubed
1/2 Radish cubed
2 small Aubergine cubed
3 tbsp green peas
1 green banana cubed
7-8 Broad beans
1 tomato
1 potato cubed
8-10 cubes of pumpkin
2 tbsp grated Ginger
2 tbsp coriander leaves chopped
1 tbsp coriander powder
1 tsp Turmeric Powder
Salt to taste
1 tbsp Ghee or any of your cooking oil
1 Tsp Panchphoron (mix of cumin seeds,mustard seeds,fenugreek seeds,kala zeera, Aniseeds)
2-3 Whole Red  chillies
Pinch of Asafoetida
1 tbsp roasted zeera lanka powder(cumin seeds and red chillies powder)






Although i have given a detail quantity description of the vegetables but you can use any quantity and any vegetables for Dalma. Today I had these vegetables so i am posting with these but in an authentic Odia Dalma we put Yam as well.

Wash Toor dal and along with all the vegetables , water , salt, turmeric and coriander powder pressure cook it for 1 whistle.
 For Tempering, take Ghee in a pan add panchphoron and red chillies. Then add a pinch of asafoetida and grated ginger. Put the tempering into the dal. Add roasted cumin and red chilly powder to dalma.Garnish with coriander leaves.

Uttapam

Uttapam is a dish having rice , urad dal and vegetables everything in one dish.Relish this dish with your favourite chutneys and Sambhar.



For Dosa Batter, soak 1cup of urad dal and 3 cups of rice separately for 8 hours.Blend both urad dal and rice into a semi thick batter and leave it to ferment overnight. If it is winter , place the batter in a warm place.

Add your choice of vegetables , salt to the batter and make uttapams of it. Here is mine :



Grated Carrots
Finely chopped onion
chopped curry leaves
chopped coriander leaves
Finely chopped green chillies
Halved cherry tomatoes
Grated Paneer







Mix all the vegetables to batter except paneer. spread little oil to tawa put the batter.sprinkle grated paneer over it. Flip over the uttapam when one side is cooked. cook both the sides and serve with sambhar and chutney.

Raw Mango Chutney....Spicy and Tangy


Mango chutney can be served with Idli, Dosa, Rice, pakoda as an accompaniment. Here we get raw mangoes in   Indian grocery stores all round the year. I remember in India we used to relish the tangy raw mango only during summer.  My family love this chutney and for me... there is no cooking for this chutney.



Ingredients:
3 Medium Sized Green Raw Mangoes
2 Green Chillies
Salt to Taste
1 Tbsp Sugar



Blend all the ingredients with little water and relish the spicy and tangy chutney.Today I am serving this with idli and sambhar.

Eggless Banana Pancakes With Raspberry Sauce


This Pancake is my 1 year old Daughter's favourite breakfast. Delicious for kids and big ones...
This fluffy pancake can be prepared and served in jiffy....yummmm




Ingredients For Pancakes:

1 cup Maida (All Purpose Flour)
1 Banana mashed
1 Tbsp Caster sugar
1/2 Tsp Crushed Aniseeds(Saunf)
1/2 Tsp Baking Powder
1 cup Milk
Butter as required

Mix all the Ingredients together except butter . In a pan put little butter and make pancakes of Batter.
Serve with Raspberry Sauce.

Raspberry Sauce:

Take 250gms Raspberry in a Pan .Add 2 tbsp Sugar to it . Cook for 5 mins. Sprinkle 1/4 tsp of Cardamom powder.
