Paneer Bhurji..........Scrambled Cheese


Cheese is one my favourites. I love to have it on its own. Today's dinner menu is Paneer bhurji with home made Paneer or as we odia say it Chenna.
Paneer Bhurji is the vegetarian version of Anda Bhurji or Scrambled Eggs.
Here is how to prepare Chenna or paneer at home.



Take 1 litre milk on pan and bring it to a boil.

 Add 2 tbsp vinegar or 2 -3 tbsp of lemon juice to it. The milk will curdle.


 Leave it for some time and then strain the chenna and rinse it with cold water to get rid of  the smell of vinegar or lemon.












Ingredients:

1 medium size onion - chopped
2 Green chillies - chopped
1 Tomato - chopped
1/2 tsp cumin seeds
2 Tbsp coriander leaves - chopped
Chenna or grated paneer
1 Tbsp MDH kitchen King Masala powder
1/2 tsp Turmeric
1 Tbsp Olive oil
Salt to taste



Take oil in a wok add cumin seeds to it . When it starts spluttering add onion and greenchillies and fry till the onion is golden brown . Then add turmeric, tomatoes and kitchen king masala (u can add any other masala powder of ur choice) and cook till tomatoes are cooked. Add Chenna and salt to this and cook for 2 minutes. Stir in the coriander leaves at end and Serve it with Rice or Roti.

Dal Fry


As this is my first post this is very special to me and my family.Dal is a staple dish in our home and as far as i know every indian family have different varieties of Lentils in their cuisine.
Dal Fry is my DH favourite one among lentils.He even orders this every time we go to a restaurant so thought this has to be my first post.




Ingredients:

Yellow Moong Dal(dry roasted) -1 cup
1 medium Onion
Ginger -1tsp chopped
Garlic -1 tbsp chopped
2 Green chillies chopped
Whole Red chillies
1 Tomato
Curry leaves
Coriander Leaves -few sprigs
Cumin seeds -1 tsp
Asafoetida - pinch
Red chili powder - 1/2 tsp
Butter - 1tbsp
Olive oil - 1 tsp
Salt to taste
Turmeric - 1/2 tsp

Pressure cook dal with enough water, salt and turmeric.
Once all the steam from cooker is out, Prepare for the tadka.

Tadka:

Add oil and butter to hot kadai.Put cumin seeds and redchillies.
When it starts spluttering add asafoetida, onion , ginger , garlic and green chillies. Fry till it is golden brown.Then add curry leaves,redchilli powder and tomato and fry for 2 more minutes.Add dal to the tadka .
Garnish with Coriander leaves.
